Agar-agar is a hydrocolloid extracted from agarophytes algae, occurring as structural carbohydrate in the cell walls of red seaweeds. It consists of a mixture of two polysaccharides: agarose (making up about 70% of the mixture) and agaropectin. Agarose is a neutral polymer which is made up of repeating units of agarobiose, a disaccharide consisting of D-galactose and 3,6-anhydro-L-galactopyranose. Agaropectin is a charged, sulfated polymer made up of alternating units of D-galactose and L-galactose (Figure 1).
